{Potato Chip Cookies}


It has been crazy hot here this week...
think heat index of over 110*.
Definitely makes you want to stay inside
and sit on your couch with bonbons:-)
But since I don't really have any bonbons,
how about some yummy cookies???
I really love a good sweet and salty treat and
these are perfect for that fix.

Go ahead, turn the air down super cool
and bake yourself some delicious cookies:-)

Potato Chip Cookies

(adapted from Taste of Home's Best Summer Desserts)

1/2 c. butter
1/2 c. shortening
3/4 c. sugar
3/4 c. brown sugar, packed
2 eggs
2 c. flour
1 tsp. baking soda
2 c. crushed potato chips
1 c. butterscotch chips
chocolate almond bark
shortening

Preheat oven to 375* Cream butter, shortening, and sugars in a large bowl until light and creamy. Beat in the eggs, one at a time. Mix the flour and baking soda in another bowl. Slowly start to incorporate them into the creamed mixture. Stir in the potato chips and butterscotch chips. Drop by tablespoon onto an ungreased baking sheet. Bake 10 minutes or until the tops are golden brown. Cool 1-2 minutes on the baking sheet, then remove to the counters that have been covered with wax paper. Place the chocolate and 1 tsp. shortening in a microwave safe bowl and heat for 1 minute. Stir until completely melted. Dip the bottoms of the cooled cookies into the chocolate and place on the wax paper to dry.

  2. Yum, these look great. I have a delish potato chip cookie recipe too that I dip in chocolate, but I love the idea of the butterscotch chips. Yum!
