Tropical Blonde Brownies with the BruCrew


We usually take a family vacation to the beach every summer,
but this summer we spent our week on the lake...
which was boat loads of fun....
well as much fun as can be had when you are
trying to keep your feet up away from fish!

But right now I am dreaming of sand and ocean waves!
(I absolutely love lying on the beach and listening to the sounds)
Now I have a small cure for this predicament...
it won't cure the no beach problem,
but it helps you feel better about that.

Just add some coconut to cookies.
Simple fix huh?
Coconut totally says tropics in my mind:-)
If you close your eyes while eating these,
you can almost feel the beach breeze blowing by.

Now just about any cookie will do,
but if you add it to these blonde brownies...
oh boy, no stopping you from eating them.
And I upped the coconut factor,
by adding in coconut m&m's.
(They have quickly become one of my fav candies!!!)

And that is ok, since you really aren't going to the beach,
you don't have to worry about that swim suit fitting:-)

I hope you enjoy making and eating these...
they are definitely a MUST make again treat for me!

Tropical Blonde Brownies
2 c. brown sugar
2 eggs
1 stick butter, softened
2 tbsp. milk
2 c. flour
1 tsp. salt
2 tsp. baking powder
2 tsp. rum extract
3/4 c. shredded coconut
1-2 c. chocolate chips (I tend to like a lot of chocolate)
4-5 (1.5 oz) bags coconut m&m's

Preheat oven to 350* Beat the butter and brown sugar until very creamy. Add the eggs, extract, salt, and baking powder and beat again. Slowly beat in the flour until just combined. Stir the coconut, m&m's, and chocolate chips in by hand. Spread in a greased 9x13 pan and bake for 20 minutes. Now when you pull them out they will very under baked. This is where you preference comes in...I like mine oooeeyy gooeey and under baked. If you are a more baked kinda gal, cook them 3-5 more minutes. Let them cool completely before digging in. (I actually think these these taste better the next day)
