One of my most favorite things to bake with is coconut. I might be guilty of adding it to a lot of my baked goods! What can I say? I am hopelessly addicted to the sweet goodness! Hopefully you are too:-) Or you are not going to like what I have for you this week. A couple weeks ago I made Coconut Macaroon Brownie Bites over on my blog, and I got to thinking that maybe there was an easier way to make the same thing. It was such a good thing I had to bring them to a church staff retreat...I just might have eaten the entire pan by myself if we were to stay home together.
One of the best parts of this recipe is that it uses store bought coconut macaroon candies...now if you want to go all Martha on me, you are more than welcome to make your own. But I have no problem purchasing a bag of ready made ones:-) (The ones I used came from the candy aisle at the Dollar General.)
If you are not a coconut fan, I suggest you quit reading right now. These were super full of coconut and absolutely some of the best brownies EVER! But don't take my word for it...get in your kitchen and bake your own:-)
Almond Joy Brownies
1 brownie mix
1 c. chopped almonds
2 bags of coconut macaroons
2 c. white chocolate chips melted with 2 tsp. butter
toasted coconut
almond joy pieces
Preheat your oven to 350* Spray a 9x13 pan with non stick spray and set aside. Mix up your brownie mix according to the 2 egg directions. Stir in the chopped almonds. Spread half the batter in the prepared pan. Flatten the coconut macaroons and lay side by side on top of the brownie batter. If you have a few leftover, break into pieces and fill in the gaps. Cover the macaroons with the rest of the batter. Bake 22-24 minutes. Let cool completely on a wire rack. Melt the white chocolate chips and butter in a microwave safe bowl. Spread on top of the cooled brownies. Sprinkle with almond joy pieces and toasted coconut.
