Oatmeal Caramel Apple Cookies

Fall is slowly coming to a close and
I decided that it was time to make
something healthy.

If you add apples to cookies,
that counts as a healthy snack right??? :-)

Anyway to get your apple a day!!!



Oatmeal Caramel Apple Cookies


1 3/4 c. flour
1/4 tsp. salt
1/2 c. oatmeal
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. butter
1 c. brown sugar
2 eggs
1 1/2 c. chopped rolos (I quartered them)
1 c. finely chopped apples
1/2 c. chopped walnuts

Preheat oven to 375* Sift all dry ingredients in a bowl and set aside. Cream butter and sugar until fluffy. Add eggs and beat again. Slowly add the dry ingredients until all incorporated. Stir in the apples, nuts, and rolos by hand. Drop by spoonfuls onto a baking sheet and bake for 12 minutes. Cool on the pan for 2-3 minutes before moving onto a wire rack to cool completely.
