I like sugar...like it A LOT!!!
This sugar can come in the form of
cookies, brownies, cakes, candy bars...all will do.
I love making fun cupcakes too.
(Almost as much as I like eating them:-)
Lucky for me, these decadent cupcakes were
for someone's birthday.
Meaning they didn't stay at my house tempting me
with their yummy swirled frosting and crunchy toffee bits!
I mean, look at them...
Wouldn't you just want to dive right into one too?

Toffee Mocha Cupcakes
1 chocolate cake mix
3 tsp. instant coffee
1 c. toffee bits
1/3 c. chocolate chips, melted
extra toffee bits
Preheat oven to 350* Dissolve coffee in water that is called for on cake box. Mix up batter according to directions. Stir in toffee bits after mixing. Fill cupcake liners 3/4 full. Bake 20-22 minutes or until the top springs back. Cool on wire rack. Frost with Toffee Butter Cream. Drizzle with melted chocolate chips. Sprinkle with extra bits.
Toffee Butter Cream
1 c. butter
1 c. shortening
1 tsp. vanilla
1/8 tsp. salt
2 Tbsp. toffee nut coffee creamer (I used Coffee Mate brand)
8 c. powdered sugar
Beat butter, shortening, vanilla, salt, and creamer until creamy. Slowly add sugar. Add 1 more Tbsp. creamer to thin it out if needed.
