3/4 tsp unflavored gelatin
1/4 cup water
8 cups finely shopped cabbage (about 1 small head)
1/4 cup shredded carrot
1 tsp minced onion
1/3 cup salt
1/8 tsp pepper
3/4 cup mayonnaise
1/4 cup buttermilk
1 1/2 tblsp white vinegar
2 1/2 tblsp lemon juice
Follow directions on gelatin to dissolve. Combine dissolved gelatin, sugar, salt, pepper, mayonnaise, buttermilk, vinegar and lemon juice. Beat until smooth. Refrigerate until set. Chop cabbage, carrots and onion until very fine (food processor works nicely). Mix with sauce. Cover and refrigerate for at least 2 hours before serving.
