This recipe is pretty similar to the traditional Asian chicken salad, but I tell you what, a little change can go a long way! Even my husband liked this one and you know how men are about salad :)
whatever kind of lettuce you prefer
cucumber
canned mandarin oranges
grilled chicken
sliced almonds or those crunchy noodles
a big scoop of guacamole

Yummo. The dressing and the guacamole make for a delicious mix of flavors and best of all it fits in the diet :)
