Nutella Marshmallow Pumpkin Bread

Does anyone else feel like Fall is being rushed along this year???
It is only the beginning of September and
already Halloween goodies and treats are popping up everywhere on blogs!

I don't know about you, but I want to enjoy my favorite season...slowly!!!!
Halloween signals the end of Fall for me.
So no thank you to the ghouls and goblins just yet...
we will talk to them later!

Let's just sit down with a cup of coffee and a slice of pumpkin bread
and chit chat about when the leaves are going to change or
when our first bonfire will be!

Fall has just begun...don't rush it out just yet:-)

Nutella Marshmallow Pumpkin Bread

(adapted from BH&G Fall Baking magazine)

1 1/2 c. sugar
1 1/2 c. brown sugar, packed
1 c. oil
4 eggs
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 tsp. salt
1 tsp. nutmeg
3 1/3 c. flour
2/3 c. water
1 (15 oz.) can pumpkin
1 c. nutella, divided
1 c. marshmallow fluff, divided

Preheat oven to 350*. Spray two 9x5 loaf pans with cooking spray. In a bowl, cream the sugars and oil. Add the eggs and beat well. Stir in baking soda, cinnamon, salt, and nutmeg. Alternately add the flour and water until combined. Beat in pumpkin. Divide the batter evenly into 2 bowls. Take 1/2 the batter from 1 bowl, and spread it int0 1 prepared pan. Take 1/2 c. nutella and 1/2 c. fluff and drop spoonfuls across the top of the batter. Swirl slightly. Top with the other half of batter. Repeat with your second bowl of batter and second pan. Bake 60 minutes or until a knife inserted in the center comes out clean. Cool in the pans for 20 minutes and then remove to a wire rack to finish cooling. Wrap in saran wrap over night for best flavor.

*I had to bake mine for 70 minutes (but I have oven issues) and don't be alarmed if most of the fluff rises to the top as it bakes. Mine did too:-) It gives it a over the bonfire marshmallow taste! Love it!!!

Have a great Thursday:-)

  5. If you use real marshmallows, they will just melt right into your bread. Marshmallow fluff comes in a white plastic container usually near the peanut butter or in the baking aisles in most stores. Kraft is one of the major brands, but most stores have an off brand too!
