Carrot Cake Pancakes
I saw this quote the other day in a magazine and had to laugh out loud for realsies!!!
I so believe this one hundred percent:-)

So to get more veggies in our diet, I made carrot cake pancakes for you...
with a maple cream cheese glaze.

Carrot Cake Pancakes
2 c. pancake mix
2 tsp. cinnamon
1/4 tsp. ground nutmeg
1/8 tsp. ground cloves
2 eggs
1 c. milk
1 c. finely shredded carrots
Maple Cream Cheese Glaze
2 c. maple syrup
8 oz. cream cheese, cubed
4 tbsp. butter
1/2 tsp. cinnamon
In a saucepan over low heat, combine all the glaze ingredients. Heat until melted. Use hand held emulsion blender to whip cream cheese thoroughly into the syrup. Pour over pancakes.
Place shredded carrots in a microwave safe bowl and cook for 3-4 minutes. Set aside. In a large bowl, combine the pancake mix and spices. Beat in eggs and milk until moistened. Stir in cooked carrots. Pour 1/4 c. at a time onto a hot greased griddle. Flip the pancakes over when bubbles form on top. Cook until golden brown. Top with glaze and enjoy.
